Vegetables in Spicy Almond Sauce

Chinese cooking depends on a blend of various ingredients and condiments rather than the taste of individual ingredients. This recipe is a good example of harmonious and subtle flavours marrying together to create a simple but stunning dish.

Ingredients


2 cups vegetables (baby corn, broccoli, carrots), cut into wedges (parboiled)
1 teaspoon fresh red chillies, sliced
1/2 cup blanched, peeled and sliced almond (badam)
3/4 cup bean sprouts
2 cups Chinese white sauce
1 tbsp oil
salt to taste

Method
  1. Heat the oil, add the fresh red chillies, almonds, bean sprouts and vegetables and sauté for a few seconds.
  2. Add the Chinese white sauce and salt and bring to a boil.
  3. Serve immediately.

Tips
  1. To blanch the almonds, boil water and take off the flame. Add almonds to the hot water and keep aside for 10 to 15 minutes.
  2. The skin will loosen thus making it easy to peel the almonds.
