Kids love all things colourful! that is what made me choose coloured pasta for this dish, and of course rest assured the veggies will boost your kids’ nutrient meter for the day!

Ingredients

2 tsp butter
2 tsp finely chopped garlic (lehsun)
1/4 cup chopped onions
1/4 cup chopped capsicum
1/4 cup broccoli florets , blanched
1/4 cup chopped carrots , blanched
1/2 cup chopped tomatoes
1/2 tsp finely chopped green chillies (optional)
2 cups boiled mixed coloured pasta
3 tbsp grated mozzrella cheese
3/4 cup milk
salt to taste

Method
  1. Heat the butter in a non-stick pan, add the garlic, onions and capsicum and sauté for 3-4 minutes while stirring continuously.
  2. Add the broccoli, carrots, tomatoes, green chillies and sauté again for 2 to 3 minutes.
  3. Add the pasta, cheese, milk and salt and mix well. Cook for another 3-4 minutes or till the cheese melts.
  4. Serve hot.
