Vegetable Hong Kong Style With Steamed Rice

Tasty and spicy, vegetable and steamed rice make an excellent combination.

Makes 4 servings


Ingredients

1 1/2 cups chinese steamed rice (chawal)
2 1/4 cups parboiled mixed vegetable cubes
1 capsicum , cut into big pieces
2 tsp finely chopped ginger (adrak)
1 tsp finely chopped garlic (lehsun)
3 to 4 whole dry kashmiri red chillies , broken into pieces
2 to 3 tbsp soy sauce
4 tsp vinegar
2 tsp chilli sauce
1 1/2 cups clear vegetable stock or water
2 tbsp cornflour
a pinch of sugar
2 tbsp oil
salt and freshly ground black pepper powder to taste

Method
  1. Heat the oil in a wok or frying pan on a high flame. Add the vegetables, ginger, garlic, red chillies and stir fry over a high flame for 2 minutes.
  2. Add the soya sauce, vinegar, chilli sauce, salt and pepper.
  3. Mix the stock and cornflour, add to the mixture and cook for 1 minute. Add the sugar.
  4. Top with the steamed rice and serve hot.
