Vegetable Balls In Hot Garlic Sauce

This starter is for those who like a little zing. The hot and sour garlic sauce which coats the deep fried vegetable balls makes a tantalizing starter or can even be served to make a snack.

Ingredients


For The Vegetable Balls
1/2 cup grated carrot
1/2 cup cauliflower , grated
1/2 cup finely chopped french beans
1 tbsp cornflour
1 tsp oil
salt and freshly ground black pepper powder to taste

Other Ingredient
oil for deep-frying

To Be Mixed Into A Garlic Sauce
1 tsp garlic (lehsun) , chopped
1/2 tsp finely chopped ginger (adrak)
1/2 tsp finely chopped green chillies
1 tsp white vinegar
1 tsp soy sauce
1 tsp vegetarian oyster sauce
1/4 cup finely chopped spring onions whites
1 tsp sesame (til) oil
1/4 tsp black peppercorns (kalimirch) , crushed
1/4 tsp cornflour
1 1/2 tablespoons schezuan sauce
1 tsp sugar

For The Garnish
3/4 cup finely chopped spring onion greens

Method
For the vegetable balls

  1. Heat the oil in a pan. Add the carrots, cauliflower and french beans and cook till the vegetables are tender.
  2. Add the salt and pepper. Sprinkle the cornflour and mix well.
  3. Take off the flame and allow the mixture to cool.
  4. Make 8 rounds from the mixture and keep aside.
  5. Deep fry the rounds in hot oil till they are golden brown and drain on absorbent paper.

How to proceed

  1. Place the garlic sauce in a pan and allow it to come to a boil.
  2. Just before serving, add the vegetable balls and bring to a boil. The sauce should be just enough to coat the vegetable balls. Add a little water, if required, to adjust the consistency.
  3. Serve immediately, garnished with the spring onion greens.
