Vatana nu oondhiyu is a quick and easy subzi made with fresh and tender green peas, cooked with the pod intact. This is a favourite amongst the gujarati community in the us and uk. This recipe uses very common and simple spices, and the focus is really on the juicy sweetness of the peas. Remember to wash the peas well and string them carefully, as we are going to cook it with the pod.

Ingredients

3 cups fresh green peas (with pods)
2 tbsp oil
1 tsp carom seeds (ajwain)
1/4 tsp asafoetida (hing)
salt to taste

To Be Ground Into A Smooth Paste (using Little Water)
4 green chillies
3 tbsp chopped coriander (dhania)
1 tsp lemon juice
3 tbsp finely chopped fresh green garlic (hara lehsun)
12 mm. ( 1/2”) piece ginger (adrak)

Method
  1. Wash and string the peas, taking care not to separate the pods. Keep aside.
  2. Combine the green peas, prepared paste and salt along with 3 tbsp of water in a small vessel and keep aside.
  3. Heat the oil in a small non-stick pan, add the carom seeds and asafoetida and sauté on a medium flame for 30 seconds.
  4. Add this tempering to the green peas and mix well.
  5. Place this vessel with the peas in a pressure cooker and pressure cook for 1 whistle.
  6. Allow the steam to escape before opening the lid.
  7. Serve immediately.

Handy tips

  1. These peas have to be eaten in the same way as you eat drumsticks.
  2. Garlic can be substituted with an additional 3 tbsp of coriander in the paste.
