A simple and colourful vegetable dish, where the gravy is thickened using peanuts and coconut.

Ingredients


3/4 cup boiled green peas
3/4 cup boiled corn
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped capsicum
1/2 cup peanuts, crushed
1 tsp ginger-green chilli paste
1/4 cup grated coconut
1/4 tsp turmeric powder (haldi)
1/2 cup grated tomatoes
1 1/2 tsp oil
salt to taste

Method
  1. Heat the oil and add the cumin seeds. When they crackle, add the capsicum and sauté for a few seconds.
  2. Add the peanuts and sauté for a few seconds till they are lightly browned.
  3. Add 1 cup of water, ginger-green chilli paste, coconut, turmeric powder and salt and simmer for a few minute.
  4. Add the tomatoes, green peas and sweet corn kernels and cook for 2 to 3 more minutes.
  5. Serve hot with Padwali Rotis.
