Vanilla Ice-Cream With Flaming Sauce

Ingredients


1 1/2 ltrs vanilla ice-cream

For the flaming sauce
1/3 cup sugar
3/4 cup orange juice
1 1/2 cups finely chopped strawberries
1 tsp lemon juice
2 tsp sugar
1/4 cup rum or curacao

Method

    For the flaming sauce

    1. Heat 1/2 teacup of sugar in a frying pan on a low flame. When the mixture is golden in colour, remove the pan from the heat.
    2. Add the orange juice, heat and stir till the caramelized sugar is dissolved. Simmer uncovered for 5 minutes.
    3. Add the strawberries, lemon juice and 2 teaspoons of sugar and heat for 2 minutes.
    4. Heat the rum in a small saucepan. Then set it alight and pour over the strawberry mixture.

    Tips
    1. If you like, you can use mango slices instead of strawberries.
