The unusual combination of field beans and drumsticks blend perfectly well to make a nutritious and tasty vegetable. You may also use a combination of doodhi and val.

Ingredients


1 cup sprouted vaal (field beans/ butter beans) (field beans)
2 drumsticks (saijan ki phalli / saragavo) , cut into 25 mm. (1") pieces
1/2 tsp mustard seeds ( rai / sarson)
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1 tbsp oil
salt to taste

To Be Ground Into A Paste
2 tbsp fresh coconut
2 to 3 garlic (lehsun) cloves (lehsun)
1 tsp grated jaggery (gur)

Method
  1. Heat the oil in a pan and add the mustard seeds.
  2. When the mustard seeds crackle, add the vaal, salt and about ½ cup of water. Cover with a lid and cook on a medium flame till the vaal is half done.
  3. Add the drumsticks, cover and cook again till the vaal and drumsticks are cooked, adding more water, if required.
  4. Add the ground paste, chilli powder and turmeric powder and stir for 2 to 3 minutes.
  5. Finally add the jaggery and simmer for a few minutes.
  6. Serve hot.
