A mixed tropical fruit cocktail of lychees, strawberries, watermelon, melon and mango served with a coconut cream sauce.

Ingredients



For the fruit salad
1/2 cup lychees, de-seeded
1/2 cup strawberries, halved
1/2 cup watermelon cubes
1/2 cup grapes, halved
1/2 cup muskmelon balls (kharbooja)
1/2 cup mango cubes

For the coconut cream sauce
1 cup coconut cream
4 tsp cornflour
5 tbsp sugar
2 tbsp fresh cream
1/4 tsp rose essence

Method

    For the coconut cream sauce

    1. Dissolve the cornflour in 1 cup of water.
    2. Heat the coconut cream with the sugar and when it comes to a boil, add the cornflour mixed with water.
    3. Simmer for 1 minute and strain.
    4. Cool completely.
    5. Add the fresh cream and flavour with the rose essence.
    6. Refrigerate till chilled.

    How to proceed

    1. Arrange the fruits in 6 serving bowls.
    2. Pour the coconut cream sauce on top of the fruit.
    3. Serve chilled, garnished with mint leaves.

    Tips
    1. You can use a melon scoop to get round balls of fruit.
