A sumptuous dessert of sponge soaked in brandy and orange juice sandwiched with banana, whipped cream and walnuts.

Ingredients



For the sponge cake
1 recipe of Eggless Sponge Cake
grated rind of 1 lemon

For the banana filling
3 ripe bananas
juice of 3 oranges

To be mixed into a soaking syrup
juice of 1 1/2 oranges
1/4 cup brandy
2 tbsp sugar

Other ingredients
2 cups whipped cream
3/4 cup walnuts, chopped

For the garnish
3/4 cup walnuts, chopped
sliced bananas

Method

    For the sponge cake

    1. Prepare the sponge as directed adding the lemon rind to the batter.
    2. Bake as specified and cool.
    3. Slice horizontally into two.

    For the banana filling

    1. Peel and slice the bananas.
    2. Place the sliced bananas in the soaking syrup.
    3. Keep the whipped cream refrigerated.
    4. Keep the walnuts aside.

    How to proceed

    1. Drain the bananas from the syrup and soak the bottm layer of the sponge cake with the soaking syrup.
    2. Spread half the whipped cream on the soaked layer of sponge.
    3. Place all the drained bananas on top and sprinkle chopped walnuts on them.
    4. Top with the second layer of sponge cake and then soak with the soaking syrup.
    5. Spread another layer of the remaining whipped cream evenly.
    6. Garnish with sliced bananas and halved walnuts.

    Tips
    1. You can use orange liqueur instead of brandy.
    2. Slice bananas to garnish the dessert just before serving so they do not blacken.
