Ingredients



For the rice
1/2 cup rice (chawal)
1 onion, chopped
1 clove garlic (lehsun), chopped
1 tsp cumin seeds (jeera)
1 tbsp butter
salt to taste

For the cheese sauce
1 tsp plain flour (maida)
1 tsp butter
3/4 cup milk
2 cheese slices
salt to taste

For the stir-fried vegetables
1/2 cup chopped french beans
1/2 cup carrot cubes
1/2 cup sweet corn (makai ke dane)
3 tsp butter
salt to taste

Method

    For the rice

    1. Wash and soak the rice in water for about 20 minutes. Drain and keep aside.
    2. Heat the butter in a saucepan. Add the cumin seeds and when they crackle, add the onion and garlic and saute for 2 minutes.
    3. Add the rice, salt and 1 cup of hot water and simmer on a slow flame till the rice is cooked. Keep aside.

    For the cheese sauce

    1. Melt the butter, add the flour and cook on a slow flame for 2 minutes, while stirring throughout.
    2. Add the milk gradually while stirring continuously, so that no lumps form. Bring it to a boil.
    3. Add the cheese slices and salt and mix well.
    4. Remove from the fire and keep aside.

    For the stir-fried vegetables

    1. Blanch all the vegetables separately in salted hot water.
    2. Stir-fry the french beans, carrots and corn separately using 1 teaspoon of butter for each. Keep aside.

    How to proceed

    1. Transfer the rice onto a serving plate.
    2. Reheat the cheese sauce and pour on top of the rice.
    3. Arrange the stir-fried vegetables on top of the rice.
    4. Serve hot.
