A red hued, tangy Tomato rice recipe is traditional to South Indian cuisine and brings forth a delectable tomato puree based rice preparation. The delicious tomato rice is best paired with pickle or raita and enjoyed as tiffin or lunch option.

Ingredients


4 cups of Basmati Rice;
3-4 Tbspns of Butter;
6 cups of water;
20 Ripe Big Tomatoes-(steam tomatoes, peel off skins - mash well & keep aside);
12-15 Green Chillies - slit in two;
4 Big Onions - finely sliced;
18-20 Mint Leaves;
A sprig of Curry leaves;
¾ Big Bundle of Corriander leaves - finely chopped - keep 3 tbpsn for garnishing;
2 Tbspns Ginger/Garlic Paste;
¼ - ½ Cup Oil;
Salt to taste;
Turmeric Powder -1 level tspn;
Lime Juice - 3-4 Tbspns.

Method



  1. Wash, drain rice well,
  2. Fry in butter on low flame for 8-10 mins till rice is crisp -
  3. Put in electric cooker bucket & keep.
  4. Pour oil in a vessel, fry the onions till brown, lower flame & add ginger/garlic paste, green chillies, curry leaves, mint leaves, corriander leaves & fry for 3-4 mins. add salt to taste, turmeric powder, mashed tomatoe pulp an
