A tomato soup with an indian touch.

Preparation Time:    Cooking Time:     Makes 6 to 8 servings


900 gms tomatoes
225 gms carrot
2 onions
4 to 5 clove garlic (lehsun)
1 tbsp butter
5 tbsp grated fresh coconut
1 1/2 cups white sauce
salt and to taste
bread croutons to serve

  1. Cut the tomatoes into big pieces.
  2. Grate the carrots.
  3. Chop the onions.
  4. Crush the garlic.
  5. Heat the butter in a vessel and fry the onions and garlic for 2 minutes.
  6. Add the tomatoes, carrots, coconut and 3 teacups of water and boil till cooked.
  7. Blend the mixture in a liquidiser and strain the soup.
  8. Add salt and boil for 10 to 15 minutes.
  9. Add the white sauce and pepper and mix well.
  10. Serve hot with bread croutons.

Tastier then the usual tomato soup.The coconut removes the sourness of the tomatoes and adds flavour.
