Jaggery has a high iron content as it is prepared in iron utensils. It is thus an ideal food for others-to-be. In these Rotis, jaggery combines with another iron-rich ingredient til to provide a double dose of iron for the expectant mother!

Ingredients


1 1/2 cups whole wheat flour (gehun ka atta)
6 tbsp grated jaggery (gur)
1 tsp sesame seeds (til)
2 tbsp ghee, melted
a pinch of salt

Other ingredients
2 tsp ghee for brushing

Method
  1. Combine the jaggery with 2 tablespoons of water in a pan and cook over a slow flame till the jaggery dissolves. Cool completely.
  2. Combine the wheat flour, melted jaggery, sesame seeds, ghee and salt and knead well into a firm dough, using enough water.
  3. Divide the dough into 6 equal portions.
  4. Roll out each portion into a 125 mm. (5") diameter circle.
  5. Heat a tava (griddle) and cook each roti over a medium flame till both sides are golden brown.
  6. Brush each roti with a little ghee.
  7. Serve hot.
