Three Fibre Paratha

Stone-ground flour keeps the nutrients intact and is high in fiber. Two more fibers consolidate it.

Makes 8 parathas.


Ingredients


2 tbsp moong dal (split green gram) with skin
2 teacups whole wheat flour, stone ground
1/3 cup moong dal (split green gram) with skin
1 large potato, boiled and mashed
2 tsp coarsely powdered coriander (dhania) seeds
3 green chillies, finely chopped
1 onion, chopped
2 tsp oil
salt to taste

For the cooking
4 tsp oil

Method
  1. Soak the moong dal for 2 to 3 hours.
  2. Mix all the ingredients and add enough water to make a soft dough.
  3. Roll out into thick rotis and cook on a non-stick tawa (griddle) on both sides with a little oil until pink spots appear on top.
  4. Serve hot with yoghurt.
