A delicious red pumpkin soup, mildly spiced with Thai red curry paste.

Thai Style Pumpkin Soup recipe - How to make Thai Style Pumpkin Soup

Preparation Time:  15 min.    Cooking Time:  25 min.   Total Time:     Serves 4 to 6.

  1. Heat the oil in a large pot, add the onion and fry for a few minutes.
  2. Add the red curry paste and fry for 4 minutes.
  3. Stir in the pumpkin pieces, coconut milk and seasoning cube and 2 cups of water.
  4. Cover with a lid and simmer for 15 to 20 minutes or until the pumpkin is tender. Do not overcook.
  5. Puree half the soup and leave the other half as it is. Add salt.
  6. Mix both these, heat and serve garnished with coriander.

  1. If you would prefer a thick soup, puree all the ingredients.
