The simple tendli subzi is made differently with spouted matki and soya granules. Soya granules enrich this subzi with its protein, calcium and iron content.

Method
  1. Soak the soya granules in salted warm water for 5 to 7 minutes. Drain and squeeze out the water. Keep aside.
  2. Heat the oil in a pressure cooker add the cumin seeds.
  3. When the seeds crackle, add the onions and green chilli-ginger paste and sauté till the onions turn translucent.
  4. Add the round gourds, matki, soya granules, turmeric powder, red chilli powder, coriander-cumin seed powder, salt and 1/2 cup of water, mix well and pressure cook for 1 to 2 whistles.
  5. Allow the steam to escape before opening the lid.
  6. Just before serving add tomatoes and mix well.
  7. Serve hot garnished with coriander.
