Tava pulao, another quick treat off the pav bhaji cart! this delicious pulao is prepared in advance by the vendor, and shares a place on the pav bhaji tawa. It is swiftly portioned out onto serving plates when the orders flow in, to appease the severest of hunger shots.

Makes 4 plates


Ingredients

3 tbsp butter
2 tsp cumin seeds (jeera)
1 1/2 tbsp chilli-garlic paste
1/2 cup finely chopped onions
1/2 cup chopped capsicum
1 1/4 cups finely chopped tomatoes
salt to taste
1/4 tsp turmeric powder (haldi)
2 tsp chilli powder
4 tsp pav bhaji masala
2 1/2 cups cooked rice (chawal)
1/4 cup boiled green peas
1 tbsp finely chopped coriander (dhania)

To Be Mixed Into A Raita
3/4 cup curds (dahi) , beaten
1/2 cup chopped onions
1/2 tsp finely chopped green chillies
1 tbsp finely chopped coriander (dhania)
salt to taste

For Serving
raita , recipe above
4 roasted papad

Method
  1. Heat the butter on a large tava (griddle), add the cumin seeds and sauté on a medium flame till they crackle.
  2. Add the chilli-garlic paste and onions, mix well and sauté on a medium flame for 3 to 4 minutes or till they turn light pink in colour.
  3. Add the capsicum, tomatoes, salt, turmeric powder, chilli powder, pav bhaji masala and ¼ cup of water, mix well and cook on a medium flame for 4 to 5 minutes or till the oil separates, stirring once in between.
  4. Add the rice, green peas and coriander, toss gently and cook on a medium flame for another minute.
  5. Place equal portions of pulao on 4 plates and serve immediately with raita and papads.

Variation:

  1. Jain tava pulao: replace chilli-garlic paste with red chilli paste, page 64, avoid adding onions and proceed as per the recipe.
