Vitamin c rich veggies like lettuce, capsicum and tomatoes tossed together with an italian dressing. But dress this salad just before serving to prevent the loss of vitamin c due to exposure of air.

Makes 4 servings

Ingredients

1 cup quartered and deseeded tomatoes
1 cup sliced cucumber
2 cups lettuce leaves , torn into pieces
1/2 cup quartered and blanched mushrooms (khumbh)
1/2 cup capsicum cubes

To Be Mixed Into A Dressing
1 tsp crushed garlic (lehsun)
1 tsp chopped fresh basil leaves
1 1/2 tbsp lemon juice
1 tsp olive oil
1/4 tsp dry red chilli flakes (paprika)
salt and freshly ground black pepper powder to taste

Method
  1. Combine all the ingredients for the salad in a bowl, mix well and refrigerate till chill.
  2. Just before serving, add the dressing and toss well.
  3. Serve chilled.
