An inseparable part of Lebanese cuisine, Tahini basically means a paste of roasted sesame (til) seeds. The paste is widely used to make salad dressings, dips and sauces. In the given recipe it is combined with curds which results in a unique bitter-sour product. Besides pita bread, as suggested, the dip goes well with pita bread or lavash.

Ingredients


1 1/2 cups fresh curds (dahi)
salt to taste

For the Tahini paste
2 tbsp sesame seeds (til)
2 tbsp lemon juice
2 tbsp olive oil
1/2 tsp finely chopped garlic (lehsun)
salt to taste

For serving
Pita Bread or Lavash

Method

    For the Tahini paste

    1. Roast the sesame seeds on a tava (griddle) for a few seconds.
    2. Cool, add all the remaining ingredients and blend in a mixer to a smooth paste.

    How to proceed

    1. Hang the curds in a muslin cloth for 15 minutes.
    2. Whisk till smooth and add the Tahini paste and salt if required.
    3. Whisk again and refrigerate till ready to use.
    4. Serve immediately with pita bread or lavash.
