Your favourite summer drink, Ganne ka Ras, can now be served in a more sophisticated way when made into a granita. Buy freshly squeezed sugarcane juice and freeze it quickly as it darkens very quickly.

Ingredients

6 cups sugarcane juice
1 tbsp ginger juice
6 to 8 tbsp sugar
1/2 tbsp lemon juice
Method
  1. Combine all the ingredients in a bowl and mix well till the sugar dissolves.
  2. Pour into a shallow container. Cover and freeze till it is set (approximately 4 to 6 hours).
  3. Transfer to a blender and liquidise till it is slushy.
  4. Scrape this using a fork and spoon into 4 individual serving glasses and serve immediately.

Tips
  1. Readymade sugarcane juice sometimes already contains ginger juice.
  2. Taste it and add more to adjust the flavours to your preference.

This was indeed a very unusual recipe, a combination of sugar cane juice which is my favorite along with ginger and lemon and sugar when cozen and eaten is just wow in taste.
