Ingredients

Method
  1. Scrape out the coconut meat, add 3 cups of water and blend in a blender. Strain the coconut milk.
  2. Put the tomatoes in hot water for 10 minutes. Remove and blend into a puree.
  3. Heat the ghee, add the onion and fry until golden. Add the green chillies.
  4. Mix the chilli powder and turmeric powder with a little water. Add to the onion the fry for a few seconds.
  5. Add the tomato puree and curds and fry for a few minutes. Add the vegetables and fry again.
  6. Add the coconut milk and bring to a boil.
  7. Sprinkle the dry powder over the vegetables and cook for a few minutes. Add salt.
  8. Serve hot.
