Stuffed Urad Dal Puris ( Radha Bhallavi)

Radha bhallavi is the traditional bengali bread. Plain flour puris stuffed with seasoned urad dal filling, sealed and again rolled into small puris and deep-fried.

1/2 cup plain flour (maida)
1 tbsp oil
salt to taste
oil for deep frying

For The Filling
1/4 cup urad dal (split black lentils)
1/2 tsp ginger (adrak) paste
3 whole dry kashmiri red chillies
a pinch asafoetida (hing)
a pinch carom seeds (ajwain)
1/2 tsp sugar
salt to taste

For the filling

  1. Clean, wash and soak the urad dal in ½ cup hot water for an hour and blend in a mixer till smooth. Keep aside.
  2. Heat the oil in a pan and add the ginger paste, red chillies, asafoetida and carom seeds and sauté for 1 minute.
  3. Add the dal paste, sugar and salt, mix well and cook for 5 minutes.
  4. Remove from the flame and keep aside to cool.
  5. Divide the filling into 4 equal portions and keep aside.

How to proceed

  1. Combine the plain flour, salt and oil in a bowl, mix well and knead into a soft dough, using enough water.
  2. Divide the dough into 4 equal portions and shape them into small circles.
  3. Place a portion of the filling at the centre and bring the sides together at the centre to seal the edges and roll again to make small puris.
  4. Heat the oil in a kadhai and deep fry the puris till they turn golden brown and crisp form all the sides.
  5. Drain on an absorbent paper and serve hot.
