Ingredients


For The Dough
1 1/2 cups fenugreek (methi) leaves leaves , finely chopped
1 1/2 cups whole wheat flour (gehun ka atta)
1/4 tsp baking powder
1 tbsp fresh curds (dahi)
2 tbsp melted ghee

To Be Mixed Into A Stuffing
100 gms grated paneer (cottage cheese)
3 to 4 green chillies , chopped
2 tbsp chopped coriander (dhania)
salt to taste

Other Ingredients
ghee for deep frying

Method
For the dough mixture

  1. Sprinkle salt over the chopped fenugreek leaves and leave aside. After 15 minutes, squeeze out the water.
  2. Mix the fenugreek and the flour, baking powder, curds and melted ghee and make a dough by adding a little water.
  3. Divide the dough into 12 balls and roll out each ball into a small round.

How to proceed

  1. Put 1 teaspoon of the stuffing in one round, fold the edges towards the centre and close. Roll out again.
  2. Repeat for the remaining rounds and stuffing.
  3. Deep fry in ghee.
  4. Serve hot.

The paneer stuffing is gorgeous! Its not that easy a dish to make, but follow the recipe to the tee for best results. the puris are delectable.
