Stuffed Capsicums( Low Calorie Healthy Cooking )

Stuffed capsicum, this unusual capsicum based salad is rich in vitamin c and calcium. The curd and macaroni stuffing make this lightly-flavoured salad scrumptious and hard to resist. Serve it along with chinese stir fried vegetables to make a complete meal.

Ingredients

2 capsicum
3/4 cup thick fresh low-fat curds
3/4 cup grated cucumber
1/4 cup cooked and chopped macaroni
1 green chilli, finely chopped
salt to taste

Method
  1. Cut each capsicum into 2 horizontally and scoop out the centres. Keep aside.
  2. Tie the curds in a thin muslin cloth and keep aside for 15 to 20 minutes for the water to drain out. Keep aside.
  3. Squeeze out the water from the cucumber.
  4. Combine the cucumber with the hung curds, macaroni, green chillies and salt together in a bowl and mix well.
  5. Divide it into 4 equal portions and keep aside.
  6. Stuff each capsicum half with a portion of this curds mixture. Regurgitate for at least an hour. Serve chilled.
