Stuffed Bhindis with Paneer

It is common to stuff bhindi with besan and masala powders. But, you can give the popular dish a cheesy twist by stuffing it with paneer instead. By using low-fat paneer, you can ensure guilt-free dining too! what makes the stuffed bhindi with paneer all the more delightful is the thoughtful combination of spices, tomatoes and onions, which makes the dish extremely aromatic and tasty.

To Be Mixed Into A Cottage Cheese Stuffing
3/4 cup grated low fat paneer (cottage cheese)
2 tbsp chopped coriander (dhania)
1/2 tsp finely chopped green chillies
salt to taste

To Be Ground Into A Ginger-garlic Paste
12 mm (1/2") piece of ginger (adrak)
4 garlic (lehsun) cloves

Other Ingredients
250 gms ladies finger (bhindi)
2 large tomatoes
1 tbsp oil
1 onion grated
1/2 tsp chilli powder
1/4 tsp garam masala
salt to taste

For The Garnish
2 tbsp chopped coriander (dhania)

  1. Wash, dry and slit the ladies fingers lengthwise. Keep aside.
  2. Stuff the ladies fingers with the cottage cheese stuffing and keep aside.
  3. Put the tomatoes in a vesselful of boiling water for 10 minutes. Peel and chop finely. Keep aside.
  4. Heat 2 tsp of oil in a non-stick kadhai, add the ladies fingers and cook until slightly soft. Remove the ladies fingers and keep aside.
  5. Add the remaining 1 tsp oil in the same kadhai and saute the onions on a medium flame till they turn golden brown in colour.
  6. Add the prepared ginger-garlic paste and chilli powder mixed with 1 tbsp of water and saute for a few minutes.
  7. Add the tomatoes, garam masala and salt and cook on amedium flame for a few minutes, while stirring once in between.
  8. Sprinkle a little water and add the sautéed ladies finger and cook again for a few minutes.
  9. Serve hot garnished with coriander.
