Stuffed Bhindi with Cottage Cheese

Ingredients


250 gms ladies finger (bhindi)
1 onion, grated
2 large tomatoes
1/2 tsp chilli powder
1/4 tsp garam masala
2 tbsp ghee or oil
salt to taste

For the paneer stuffing
100 gms paneer (cottage cheese)
2 pinches pepper powder
1/2 tbsp salt

To be ground into a ginger-garlic paste
4 cloves garlic (lehsun)
12 mm. (1/2") piece ginger (adrak)

For the garnish
2 tbsp chopped corriander (dhania)

Method
  1. Wash, dry and slit the bhindi lengthwise.
  2. Stuff the bhindi with the paneer stuffing.
  3. Put the tomatoes in hot water for 10 minutes. Take out the skin and grate.
  4. Heat half of the ghee or oil in a tava, add the bhindi and cook until slightly soft. Remove the bhindi.
  5. Add the remaining ghee or oil in the same tava and fry the onion till golden brown.
  6. Add the ginger garlic paste and the chilli powder mixed with 1 tablespoon of water and fry for a few minutes.
  7. Add the tomatoes, garam masala, chilli powder and salt and cook again for a few minutes.
  8. Sprinkle a little water and add the fried bhindi and cook again for a few minutes.
  9. Garnish with the coriander and serve hot.
