Strawberry White Chocolate Gateau

A light sponge generously filled with white chocolate truffle and strawberry filling is too sinful for anyone to resist.

Ingredients


1 (50 mm. (6") diameter)chocolate sponge cake
2 cups strawberries, sliced

To be mixed together into a soaking syrup
2 tbsp sugar
1/4 cup water
2 tbsp rum (optional)

For the white chocolate truffle
2 cups (300 grams) chopped white chocolate
1 cup (250 grams) fresh cream

For the garnish
8 to 10 strawberries, sliced
1/2 cup grated white chocolate

Method

    For the white chocolate truffle

    1. Boil the cream, add the chopped chocolate and stir till the chocolate dissolves completely ensuring there are no lumps. Remove from the flame.
    2. Stir over a bowl of ice to cool quickly.

    How to proceed

    1. Slice the sponge cake into 2 equal parts horizontally.
    2. Place 1 layer on a plate and sprinkle half the soaking syrup.
    3. Spread a little truffle and chopped strawberries over one layer of the cake and sandwich with the other half. Moisten this half with the remaining soaking syrup.
    4. Spread the balance truffle on the top and sides.
    5. Garnish with the sliced strawberries and the grated chocolate.
    6. Refrigerate and serve chilled.
