Ingredients

For The Biscuit Base
1 cup coarsely crushed digestive biscuits
5 tbsp melted butter

For The Filling
1 cup crumbled paneer (cottage cheese)
4 tbsp powdered sugar
1/4 cup milk
3/4 cup beaten whipped cream
2 drops of vanilla essence

For The Strawberry Sauce
1/2 cup mashed strawberries
3 tbsp sugar
1 tsp cornflour
1/2 tsp lemon juice

Other Ingredients
1/2 cup thinly sliced strawberries
Method

For the biscuit base

  1. Combine the coarsely crushed biscuits and melted butter in a bowl and mix well.
  2. Spread and press the mixture into the base of a 150 mm. (6") loose bottomed cake tin.
  3. Refrigerate for 30 minutes. Keep aside.

For the filling

  1. Combine the paneer, sugar and milk in a mixer and blend till smooth.
  2. Strain the prepared mixture with the help of a sieve.
  3. Add the beaten whipped cream and vanilla essence and mix well. Keep aside.

For the strawberry sauce

  1. Combine all the ingredients along with ½ cup of water in a broad non-stick pan, mix well and cook on a medium flame for 9 minutes ,while stirring occasionally.
  2. Blend in a mixer till smooth. Keep aside.

How to proceed

  1. Arrange the strawberries evenly over the set biscuit base.
  2. Pour the prepared filling over it and spread it evenly using the back of a spoon.
  3. Refrigerate for atleast 4 hours.
  4. Pour the prepared strawberry sauce evenly over it and refrigerate again for 3 hours.
  5. Cut into 6 equal wedges and serve chilled.

Rich tasty strawberry pie. Paneer makes a lovely filling and far healthier than cream cheese. Kids loved this.
