A freshly baked heart shaped sponge cake soaked and sandwiched with whipped cream and strawberries and garnished with sliced strawberries.

Ingredients



For the sponge cake
1 recipe of Eggless Sponge Cake

For the filling
1 cup whipped cream
1 cup sliced strawberries
1 tbsp powdered sugar

To be mixed into a soaking syrup
3/4 cup water
3 tsp powdered sugar
1 tbsp brandy (optional)
2 tbsp strawberry puree

For the garnish
1 cup whipped cream
6 whole strawberries

Method

    For the sponge cake

    1. Follow the basic recipe except use a heart-shaped cake tin and bake in a hot oven at 200 degree C (400 degree F) for 25 minutes.
    2. Cool and slice into 2 parts horizontally.

    For the filling

    1. Mash the strawberries lightly. Add the powdered sugar and keep aside for 1/2 hour.
    2. Mix the strawberries with the whipped cream.

    How to proceed

    1. Soak the sponge with the soaking syrup.
    2. Spread the filling mixture over one part of the cake.
    3. Put the other part of the cake on top.
    4. Pipe the border of the cake with a little cream.
    5. Fill the centre with srawberries.
    6. Refreigerate the cake.
    7. When you want to serve, cut into slices and serve cold.

    Tips
    1. If you do not have a heart shaped mould, use a round tin and then when the sponge is cool.
    2. Cut out a heart shape by using a paper cutting placed on the cake.
    3. Variation :
    4. Chocolate lovers can use a chocolate sponge instead of a plain sponge.
