Strawberry Cream Pie

Ingredients


115 gms Shortcrust Pastry
1 Small Fatless Sponge Mixture
200 gms fresh cream
4 tbsp powdered sugar
1/4 packet (100 grams for full packet) strawberry jelly
1 tbsp strawberry jam
1 1/2 cups sliced strawberries
3 tsp powdered sugar for the syrup

Method
  1. Roll out the pastry dough on a lightly floured board thinly to fit a 200 mm. (8") diameter pie dish.
  2. Place the pastry in an ungreased flat dish this size. Prick all over with a fork.
  3. Bake in a hot oven at 450°F for 10 to 12 minutes.
  4. Cool the pastry shell.
  5. Grease and dust a 175 mm. (7") diameter tin.
  6. Pour the sponge mixture into it and bake in a hot oven at 400°F for 15 minutes.
  7. Cool the cake and divide into 2 parts horizontally..
  8. Make a syrup by mixing 1/2 teacup of water very well with 3 teaspoons of powdered sugar. If you like, add a little rum or other liquor to the syrup.
  9. Sprinkle a little syrup over the 2 cake parts and allow it to soak. Repeat after 10 minutes. Be sure that the cake is moist.
  10. Beat the cream with the powdered sugar.
  11. Apply a thin layer of jam over the pastry and put one part of the cake on it.
  12. Spread one-third of the beaten cream and half the strawberries and put the other cake on top.
  13. Spread a thin layer of the cream over the top of this cake.
  14. Arrange the strawberries around the edges so that it can hold the jelly.
  15. Dissolve the jelly in 3/4 teacup of boiling water.
  16. Put the vessel containing the jelly in a larger vessel filled with ice-cubes and go on stirring all the time. When it is quite thick, spread over the strawberries.
  17. Pipe the remaining beaten cream on the sides. Chill.
  18. Serve cold.

Tips
  1. VARIATION : STRAWBERRY CREAM PIE (EGGLESS)
  2. Proceed as above using eggless sponge cake mixture instead of fatless sponge mixture.
