A stir-fried version of the famed Risotto, this creamy rice dish with zucchini, red, yellow and green capsicum makes it particularly enjoyable.

Ingredients

Method
  1. Heat the oil in a wok, add the onions and stir-fry for a couple of minutes.
  2. Add the garlic and celery and stir-fry for another minute.
  3. Add the zucchini and capsicum and stir-fry for a couple of more minutes.
  4. Add the rice, cream, milk, cheese and salt and cook for 3 to 4 minutes.
  5. Add the pepper and mix well.
  6. Serve immediately.
