Stir- fried greens in spicy sauce, although it sounds exotic, this recipe is easy to make. Just buy all the ‘green’ vegetables in advance and prepare them so you can save time. You can use pak choi (chinese cabbage), broccoli, zucchini, asparagus and green capsicum, and you’ll have a gravy that looks very appealing to the eye. Serve it with rice or noodles and watch your loved ones relish its different taste!

Makes 4 serves


Ingredients

2 tbsp oil
1 tbsp finely chopped garlic (lehsun)
2 tsp finely chopped ginger (adrak)
2 tsp finely chopped green chillies
1/2 cup broccoli florets , parboiled
10 french beans , cut into 25 mm.
(1”) cubes and parboiled
1/2 cup zucchini slices , blanched
1/2 cup pak choi , cut into pieces
4 to 5 asparagus , cut into 25 mm.
(1”) pieces and parboiled
1/2 cup green capsicum cubes
1/2 cup tomato puree
2 tsp cornflour dissolved in 1/2 cup water
a pinch sugar (optional)
salt to taste

Method
  1. Heat the oil in a wok / kadhai on a high flame till it smokes.
  2. Add the garlic, ginger and green chillies and sauté on a high flame for a few seconds.
  3. Add the broccoli, french beans, zucchini, pakchoi, asparagus, capsicum and sauté on a high flame for another 4 to 5 minutes.
  4. Add the tomato purée and sauté on a high flame for a couple of more minutes.
  5. Add the cornflour mixture, sugar and salt and simmer till the gravy thickens. Serve immediately.
