Steam Boat Soup

A light lemon grass flavoured soup, steaming on a burner surrounded by a selection of bowlfuls of flavourings and vegetables from which each guest can mix and match to prepare his own special soup.

Ingredients



For the vegetable stock
2 ltrs water
6 peppercorns
2 onions cut into quaters
2 carrots, chopped
2 lemongrass stalks (hare chai ki patti)
salt to taste

Other ingredients
1/2 cup small cubes of tofu (bean curd/ soya paneer) or paneer (cottagte cheese)
1/2 cup spring onions
1/2 cup sliced mushrooms (khumbh)
1/2 cup chopped corriander (dhania)
1/2 cup shredded spinach (palak)
1/2 cup sliced and blanched baby corn
1 cup bean sprouts
1 small bowl Chillies In Vinegar
10 flakes of garlic (lehsun) (sauted) in 1/2 cup of oil
1/2 cup soy sauce
chilli powder to taste

Method

    For the stock

    1. In a pot, simmer all the ingredients till they release their flavours. This should take about 10 to 15 minutes.
    2. Strain and keep aside.

    How to proceed

    1. Keep the vessel containing the soup on a burner, surrounded by bowls of the other ingredients.
    2. Allow your guests to mix and match ingredients, adding as much as they like.

    Tips
    1. Serve the soup piping hot.

    Wow! its a grand idea! the subtle flavour of lemongrass is great1 i grow my own lemon grass, because of which it is more special! Great soup.
