Sprouted Methi with Fruity Dressing

Methi is a diabetic friendly food as it helps to lower blood glucose levels; besides this its high fibre content helps to bind bad cholesterol and throws it out of the body. Its goodness increase manifold on sprouting, hence whip up a salad or a subzi for a healthy and nutritious meal. Add fruits of your choice to further enhance its flavour.

Ingredients



For the fruity dressing
1/2 cup papaya cubes
1/4 cup thick curds (dahi), beaten

Other ingredients
1/4 cup sprouted fenugreek (methi) seeds
1/2 cup apple cubes, with the skin
1/2 cup pomogranate (anar)
1/2 cup roughly chopped spinach (palak)
salt to taste

Method

    For the fruity dressing

    1. Blend all the ingredients together in a mixer till smooth.
    2. Refrigerate and use as required.

    How to proceed

    1. Combine all the salad ingredients together in a bowl and refrigerate to cool.
    2. Just before serving, add the dressing and toss well.
    3. Serve immediately.
