Ingredients



For the brown stock
2 potatoes
2 onions
2 carrots
1 large sized tomato
3 tablespoons fenugreek (methi) leaves

For the topping
2 tbsp finely chopped french beans
1/4 teacup green peas
2 tbsp finely chopped carrots
1/4 teacup cooked macaroni
2 cups finely chopped spring onions with greens
1/4 teacup finely chopped leeks with leaves (optional)
1 tablespoon fenugreek (methi) leaves
3/4 cup tomato gravy
1 tbsp grated cheese
1 tsp dried oregano (optional)
1 tsp freshly ground black pepper
1/4 tsp lemon juice
salt to taste

Method
  1. For the brown stock, cut the vegetables into big pieces.
  2. Add 5 teacups of water and cook until soft.
  3. When cooked, blend in a liquidiser and strain.
  4. For the topping, steam the french beans, green peas and carrots and add them to the stock.
  5. Add the macaroni, spring onions, leeks, fenugreek leaves and tomato gravy to the stock. Cover and simmer on a slow flame for at least 20 minutes.
  6. Add the cheese, oregano, peper powder, lemon juice and salt. Serve hot.
