An unusual, yet no-fuss soup recipe… chunks of baby corn and spinach leaves in a coconut-milk base!

Ingredients

Method
  1. Wash and cut the baby corn into thin slices. Keep aside.
  2. Heat the oil in a pan, add the baby corn and spinach and stir gently for 2 minutes.
  3. Add 3 cups of water, the cornflour mixture and coconut milk and bring to a boil while stirring continuously and then simmer for 5 minutes.
  4. Add the salt and pepper and mix well.
  5. Serve hot.

Tips
  1. You can use 3 tablespoons of coconut milk powder mixed in 1 cup of water instead of the coconut milk.
