Spinach Tartlets

Ingredients



For the tart cases
100 gms plain flour (maida)
50 gms butter
a pinch of salt

For the spinach filling
3 cups chopped spinach (palak)
1 onion, chopped
2 green chillies, chopped
a pinch of soda bi-carb
1 1/2 cups milk
1 tbsp plain flour (maida)
1 tbsp butter
salt to taste

Other ingredients
1/4 cup White Sauce
3 tbsp grated processed cheese
a few tomato cubes
tobasco sauce (optional)

Method
  1. Sieve the flour. Add the butter and salt and rub in with finger tips.
  2. Add about 1 tablespoon of ice-cold water to make a dough.
  3. Roll out the dough to about 3 mm. thickness.
  4. Cut into rounds with a fluted cutter of desired size.
  5. Press the cut pieces into tarts cases and prick with a fork.
  6. Bake blind in a hot oven at 200 degree C (400 degree F) for 10 to 12 minutes. Cool the tarts cases.

For the spinach filling

  1. Heat the butter and fry the onion for 1/2 minute. Add the green chillies and fry again for a few seconds.
  2. Add the spinach and soda bi-carb and cook for 2 minutes. Drain.
  3. Mix the milk with the flour, add to the mixture and cook until the mixture becomes thick. Add salt.

How to proceed

  1. Fill a little spinach mixture in each tart.
  2. Add a little white sauce and sprinkle some grated cheese on top. Grill in a hot oven at 200 degree c (400 degree F) for a few minutes.
  3. Decorate with tomato pieces. If you like, dot with tabasco sauce.
  4. Serve hot.
