Spinach Soup with Garlic

This nutritious, low fat, low calorie soup is best if you are trying to lose some of those extra pounds. The garlic and onion in the soup aids in decreasing the excessive fat deposition in the arteries.

3 cups chopped spinach (palak)
1 tbsp roughly chopped garlic (lehsun)
1 tsp oil
1/2 cup finely chopped onions
1 tsp cornflour dissolved in 1/2 cup low-fat milk
salt and freshly ground pepper (kalimirch) to taste

For Serving
toasted whole wheat bread

  1. Heat the oil in a non-stick pan, add the onions and garlic and sauté on a medium flame for 1 to 2 minutes.
  2. Add the spinach and cook on a medium flame for 2 minutes.
  3. Add 1 cup of cold water and purée the mixture in a blender to a coarse texture.
  4. Pour the purée back to the pan, add the cornflour-milk mixture, salt and pepper and bring to a boil.
  5. Serve hot with toasted whole wheat bread.

Healthy thin soup with a nice garlic flavour added to spinach. The key here is that no milk or cornflour is added which makes the spinach soup very healthy. Adding corn flour or milk would make the soup thicker but slow down you fat burning process as this creates more insulin release.
