You would never have thought of this combination! But noodles tossed with spinach, cheese sauce and colourful vegetables results in an absolutely delightful treat.

Method

    For the sauce

    1. Blanch the spinach in boiling water for a minute. Drain and refresh in ice-cold water.
    2. Drain again and blend in a mixer to a smooth purée. Keep aside.
    3. Heat the butter in a pan, add the spring onions and garlic and sauté for 2 to 3 minutes.
    4. Add the red capsicum and sauté for another 2 to 3 minutes.
    5. Add the spinach purée, cheese spread, milk, salt and pepper and mix well.
    6. Bring it to boil while stirring continuously. Remove from the flame and keep aside.

    How to proceed

    1. Just before serving, re-heat the sauce, adding a little milk or water if required and toss the noodles in the sauce.
    2. Serve hot.
