Cucumbers are 90 % water. The sweet taste of cucumbers adds a subtle flavour to this soup.

Preparation Time:     Serves 4.

4 small cucumbers
3 to 4 tbsp mint leaves (phudina)
2 1/4 cups low fat yoghurt
salt to taste

  1. Blend all the ingredients in a blender. Add a little cold water if the mixture is too thick. Chill.
  2. Serve chilled.
