Translucent, pretty looking rice noodles, aesthetically flavoured with Asian flavourings like cumin and coriander, these noodles will melt in your mouth and please every culinary sense.

Ingredients



To be mixed together
3 cups cooked rice noodles, refer handy tip
1/2 cup bean sprouts
1 cup chopped spring onion greens
1/4 tsp coriander (dhania) powder
a pinch of turmeric powder (haldi)
1 tbsp sesame (til) oil
salt to taste

Other ingredients
1/2 cup sliced spring onions whites
1 tsp chopped garlic (lehsun)
1/4 cup carrot, cut into thin strips
1/4 cup french beans, sliced into thin strips
1/4 cup shredded red cabbage, optional
1/4 cup sliced red capsicum
1/4 cup sliced capsicum
1 tsp oil
salt to taste

Method
  1. Heat the oil in a wok on a high flame, add the spring onion whites and garlic and sauté for a few seconds.
  2. Add the carrots, french beans, red cabbage, red capsicum, capsicum and salt and sauté for some time till the vegetables soften. Sprinkle some water if required.
  3. Add the rice noodles mixture and toss well over a high flame.
  4. Spoon out into a serving plate and serve immediately.
