This no-fuss recipe starts with readily-available digestive biscuits as the base. Within minutes, the nice crumbly biscuit base transforms into a dessert beyond comparison, once it is filled with rich cream cheese and topped with a zesty lemon sauce, which gives it an attractive glaze finish!

Ingredients


For The Biscuit Base
1 cup crushed digestive biscuits
1/2 cup melted butter

For The Filling
1/2 cup (100 gms) cream
1 1/2 lemon
1 tsp grated lemon rind
1 cup cream cheese
1/2 cup powdered sugar
1/2 tsp lemon essence

For The Lemon Sauce
3 tbsp sugar
1 tsp cornflour
3/4 tbsp lemon juice
1/2 tsp grated lemon rind
2 drops lemon essence
a drop of lemon (optional)
1/2 tsp butter

Method
For the biscuit base

  1. Mix the biscuit crumbs with the melted butter and press the mixture into the base of a 175 mm. (7") loose bottomed pie dish
  2. Chill until firm.

For the filling

  1. Whisk the cream in a clean dry bowl till soft peaks form. Keep aside.
  2. Mix the lemon rind, lemon juice, cream cheese, sugar and lemon essence till it is smooth.
  3. Fold in the whipped cream gently so that it does not curdle or split.
  4. Spread the filling over the set biscuit base and chill until firm.

For the lemon sauce

  1. Combine the sugar with ½ cup of water in a saucepan and heat till the sugar is dissolved
  2. Dissolve the cornflour in 2 tablespoons of water and add it to the sugar syrup.
  3. Heat stirring continuously till the mixture thickens and gets a coating consistency. Add the butter and mix well.
  4. Cool and add the lemon juice, lemon rind, lemon essence and lemon yellow colour. Mix well and keep aside. Cool completely while stirring continuously.

How to proceed

  1. Demould the cheese cake and place on a serving plate.
  2. Pour the lemon sauce on top and refrigerate again.
  3. Serve chilled.

Handy tip

  1. The best way to crush biscuits is to put them in a plastic bag or use a tea towel and crush using both hands till you get medium sized crumbs.
