An irresistibly sweet dish made from a sweet ingredient! try this unique halwa recipe made using sweet potatoes, flavoured with cardamom powder and saffron, and enriched with nuts to keep your energy levels high.

3 medium sized sweet potatoes
1 tsp ghee
3/4 cup milk
4 tbsp sugar
1/4 tsp cardamom (elaichi) powder
a few saffron (kesar) strands mixed with 1 tbsp milk
2 tbsp chopped mixed nuts (almonds , cashewnuts , pistachios etc.)

  1. Clean and wash sweet potatoes and pressure-cook for 3 to 4 whistles. Allow the steam to escape before opening.
  2. Peel and mash the sweet potatoes and keep aside.
  3. Heat the ghee in a non-stick pan, add the mashed sweet potatoes and sauté on a medium flame for 2 to 3 minutes.
  4. Add the milk, ½ cup of water, sugar and cardamom powder, mix well and simmer for 1 to 2 minutes, ensuring that the mixture has little liquid remaining and not completely dry.
  5. Add the saffron and mixed nuts and mix well.
  6. Serve hot.
