Thickened milk flavoured with saffron and cardamom. Making rabdi has never been so easy. The condensed milk helps to thicken the rabdi quickly, while the cottage cheese helps to add body and flavour to the rabdi. It is necessary to use unsalted paneer for this recipe as salted paneer will cause the milk to split.

Ingredients


1 cup milk
1 cup grated paneer (cottage cheese)
1/2 cup condensed milk
1/4 tsp cardamom (elaichi) powder
a few saffron (kesar) strands
1 tsp ghee
a few drops of rose essence

For The Garnish
1 tbsp chopped pistachios

Method
  1. Mix all the ingredients together in a large microwave safe bowl and microwave on high for 6 minutes.
  2. Serve chilled garnished with the chopped pistachios.

Tips
  1. Fill the microwave safe bowl to only ¼ its height, leaving enough space for the milk to rise in the microwave, without spilling over.

This recipe is awsome!!!! I, my family, my friends liked it like any thing Its' taste, taxture colour everything is excellent and so easy to prepare It is ready within no time Now will make it for full course for a replacement of sweet and whenever my milk will spoil I will go for SHAHI RABDI Thanks a million Tarlaji for giving such a lovely recipe
