Tomatoes tempered with mustard seeds and ginger and served with sev. Sev is fine vermicelli made from deep-fried gram flour paste
- Heat the oil, add the cumin seeds, asafoetida and ginger and stir 30 seconds.
- Add the tomatoes, turmeric powder, coriander-cumin seed powder, sugar and salt and simmer for a while.
- Just before you wish to serve, add the sev and mix well.
- Serve hot with chapatis.
- Make this as close to serving time as possible.
