Schezuan sauce can be used to serve with steamed wantons or spring rolls. You can also cook with noodles and rice. It's a spicy sauce made from red chillies, garlic and other spices.

Ingredients


For The Paste
20 red chillies
5 garlic (lehsun) cloves (lehsun)

Other Ingredients
1 tbsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
1/2 tbsp grated ginger (adrak)
2 tbsp finely chopped onions
1 tsp finely chopped celery
1 tbsp vinegar
1/2 cup clear vegetable stock
1 tbsp cornflour mixed with 2 tbsp of water
1 1/2 tsp vinegar
2 tsp sugar
3 tbsp oil
salt to taste

Method
For the paste

  1. Put plenty of water to boil.
  2. Add the red chillies and garlic and cook for 8 to 10 minutes. Cool.
  3. Drain out the water. Grind into a smooth paste in a liquidiser using a little water.

How to proceed

  1. Heat the oil in a wok or frying pan and fry the garlic, green chillies, ginger, onions and celery for 1 minute.
  2. Add the paste and fry again for 1 minute.
  3. Add the cooking vinegar and cook for 1 minute. Add the stock and mix well.
  4. Add the cornflour mixture, white vinegar, sugar, and salt. Cook for 1 minute while stirring throughout.
  5. Use as required.
