Saffron cardamom squares, a novel, protein-rich indian sweet that will simply melt in your mouth! you can whip up this dish in barely a few minutes and serve it as a post-dinner treat to your family. It tastes rich due to the flavour of cardamom and saffron, but is definitely not going to add to your fat deposits as i’ve used low-fat milk, page x, and skimmed milk powder to thicken the milk.

Makes 4 squares


Ingredients

10 grams (1 packet) unflavoured
china grass
3 cups low-fat milk
(99.7% fat-free readily
available in the market)
2 tbsp skim milk powder
2 tbsp sugar substitute
1/2 tsp saffron (kesar) strands dissolved
in 1 tbsp of water
2 pinches of cardamom (elaichi) powder

Method
  1. Combine the china grass with 1½ cups of water in a non-stick pan and cook on a slow flame till it dissolves completely.
  2. Strain the mixture through a muslin cloth and keep aside.
  3. In the same pan boil the milk, add the skim milk powder, china grass mixture, sugar substitute, saffron and cardamom powder and mix well.
  4. Simmer on a slow flame for 5 to 7 minutes.
  5. Remove from the flame and pour into a 100 mm. (4”) x 100 mm. (4”) square tin.
  6. Cool and the refrigerate till set.
  7. Cut into 4 equal portions and serve immediately.
