Roasted capsicum soup, this simple but delectable soup is packed with goodness of folic acid and vitamin a from capsicum and tomatoes. The high fibre content of the recipe helps to remove the excess fat from the body while the garlic helps to keep a check on your blood cholesterol levels.

Makes 4 servings


Ingredients

2 whole red capsicum
4 medium sized tomatoes
2 bayleaves
1 clove garlic (lehsun)
1/2 cup low-fat milk
(99.7% fat-free ,
readily available in the market)
2 tbsp cornflour
salt to taste

For The Garnish
2 tbsp chopped coriander (dhania)

Method
  1. Pierce a fork through the capsicum and roast them one at a time on a slow flame till it turns black.
  2. Wash and remove their skin, stem and seeds. Keep aside.
  3. Cut the tomatoes into quarters and add approximately 3 cups of water, bayleaves and garlic and boil it till the tomatoes are soft. Keep aside.
  4. Combine the capsicum and tomatoes and blend in a mixer to a smooth purée.
  5. Combine the cornflour and the milk and add it to the purée.
  6. Transfer to a deep pan, add salt and simmer for 3 to 4 minutes or till it thickens. Serve hot garnished with chopped coriander.

Handy tip:

  1. If the soup tastes sour add a pinch of sugar substitute.

Blended red capsicum and tomatoes make a great combo. This is a thick and filling reddish color soup with a great mouth feel. Low fat milk added to this makes the body of the soup. Very health and highly recommend it.
