Roasted Almond Ice-Cream with Chocolate Chips

Rich ice-cream with crunchy almonds and chocolate.

2 ltrs milk
1/2 cup sugar
3 tbsp cornflour
2 tsp vanilla essence
a few drops almond essence
400 gms fresh cream
3 tbsp levelled, powdered sugar
3 tbsp roasted almonds (badam) slivers
7 tbsp chocolate chips

  1. Keep aside a little cold milk. Mix the rest of the milk with the granulated sugar and boil for 5 minutes.
  2. Mix the cornflour in the balance cold milk and add to the boiling milk. Boil again for a few minutes. Cool.
  3. Add the vanilla and almond essences.
  4. Beat the cream with the powdered sugar lightly. Add to the ice-cream mixture and mix well.
  5. Add the almonds and chocolate chips. Prepare the ice-cream in an ice-cream churner.

  1. Prepare ice-cream 1 day in advance.
  2. Remove the ice-cream 10 to 15 minutes before serving and allow to soften.
